Dram is a small distillery, deliberately: one head distiller, one pot still, and a warehouse crew that rotates every barrel on a fixed schedule rather than a guess. We do not source finished whiskey to bottle under our own label — everything that carries the Dram name was mashed, fermented, and distilled on this site since 2009.

Every release states its mash bill, its cask program, and the proof it was bottled at, because those three numbers explain more about how a whiskey will taste than a paragraph of tasting-note prose ever will. The prose comes after, as a description of what those choices produced — not as a substitute for them.

We run one pot still, which means every batch is distilled in discrete runs rather than continuously — slower than a column still, but it gives the head distiller a direct hand in where the cut happens on every single batch, not just a sampled few.
