Tasting notes

Dried fig, walnut, dark chocolate, and a long, warming spice finish.

Barrel No. 14 spent just under nine years in a first-fill bourbon barrel before eighteen months finishing in an Oloroso Sherry Butt Finish — long enough for the dried-fruit and walnut character to fully integrate without the tannin taking over. It’s bottled straight from that single barrel with nothing blended in and nothing added: no water to bring the proof down, no chill filtration.

That means every single-barrel release varies slightly and the proof isn’t a round number — this one came off the barrel at 59.8% ABV. We publish the barrel number and proof on every label rather than a single house-average proof, because averaging across barrels is exactly what a single-barrel release is supposed to avoid.
