Port pipes run heavier-toast Portuguese oak, seasoned over several years with tawny port before we ever fill them with whiskey. Like our sherry program, this is strictly a finishing step — six to eighteen months on top of a spirit that’s already matured for years in a first-fill bourbon barrel, never a primary vessel on its own.
We check these more frequently than our sherry finishes; port’s sugar content pushes color and fruit character in faster than Oloroso does, and a pipe left too long can push a whiskey from “red berry and fig” into a cloying, jammy register that we don’t want on the label.
